I made another winter soup this week! This one comes out at 157 calories per cup of soup!
This is a creamy white bean soup with veggies and ham.
I originally planned to make a creamy blended soup; however, I cooked it at a friend’s place, and I forgot my blender.
I’ve used Myfitness Pal to calculate calories and nutrition in my homemade soup. See the screenshots below for full recipe ingredients and nutrition information.
Last week, and this week, are rather long weeks, so I didn’t take the time to take pictures of my soup creation. I sauteed diced onions, celery, potatoes, and parsley before combining into the soup broth.

I use Costco Kirkland Signature “no-salt seasoning” mix.
This is low-calorie soup, the carbs are 24 grams – 10 grams of fiber for a net of 14 grams of carbs. There are 2 cups of diced russet potatoes as well as “riced” cauliflower making up the carb count. It also has 10 grams of protein.
The 6 grams of fat is from the diced ham and heavy cream. You could also use diced turkey if you wanted it slightly healthier.

You could definitely take the soup ingredients once cooked, and combine them into a blender. Then add the ham after. I intended to do this, but didn’t.
You may want to add more salt and other seasonings to your liking.
